An addendum to my recent post Waste Not, Want Not: I'd completely forgotten about one of the best ways to use up any cooked veg left over from dinner: bubble and squeak! (Worth making for the name alone.)
Mash up the potato with all the other veg and shape into patties (the potato should bind them together — if not, try adding some beaten egg). Fry up with bacon and egg until crispy and brown. Enjoy for breakfast, brunch or lunch with strong coffee. Excellent for hangovers.

Looks great, sounds great, and the title of this concoction is intriguing (though I must confess that "Bubble and Squeak" reminds me more of a couple of politicians than it does of breakfast).

My version is slightly different - I fill a small frying pan completely with it. Does it actually 'bubble and squeak' in patty form? - although I'm sure it tastes wonderful,

The most import bit for bubble and squeak is that crispy brown bit.
I think your version is the more authentic one, Andy (pilgrimpace). My patties emitted more of a subdued sizzle.
Yums. My mom made potato pancakes, and so I do too, but it never occurred to me to combine other leftovers in the mix. Great idea!
I was talking about how its years since I had bubble and squeak only yesterday. I have happy childhood memories of it as it was the main part of my father's limited culinary repertoire.
Looks delicious. I treasure the time when my mother said to me "anyone would think you were brought up in the war years Gail, you are so careful about not throwing food away" I took it as a compliment, which I think was how it was intended!
I'm going to try the patties - filling a pan can be a little much if there is only me.

Ah yes, Andy — sounds more like spicy, curranty bread cake. Looks delicious — and excellent to pack in the rucksack.
